Eagle Bay Series Chardonnay
\nThe makeup of this Margaret River Chardonnay is of the Dijon clone 96, which has been of high fruit quality in this region. The fruit was hand picked and whole bunch pressed which allowed the winemakers to make minimal additions during the first stages of the production process. The juice was transferred to a selection of new and one year old French oak Barriques for a slow cool fermentation with wild yeasts.
\n \nTasting - Strong lemon rind and squeezed pith are at the height of the aromatic profile. Beyond this strikes light toasted bread and nuts, vanilla custard, spice and hints of cracked seashells. The palate is full and coating but balanced with a long acidity. Subtle stone fruit is complemented by a light char on the finish, while some yeasty notes help complete this complex Eagle Bay Series wine.
